Frozen Peanut Butter Bites

Ingredients

Peanut butter (enough to form 20 1-inch balls)
Confectioners’ sugar (to stiffen the peanut butter mixture)
Vanilla extract
Chopped chocolate (for dipping)
Directions

Using an electric mixer or whisk, beat peanut butter and confectioners’ sugar together until smooth and stiff. Stir in vanilla extract.
Shape the mixture into 20 1-inch balls and place them on a waxed paper-lined baking sheet. Freeze for 1 hour to chill.
Melt chopped chocolate in a small bowl set over gently simmering water, stirring until smooth. Remove from heat.
With two forks, dip each chilled peanut butter ball halfway into the melted chocolate, allowing excess to drip off. Place back on the waxed paper-lined sheet.
Use a fork to swirl decorative chocolate on top of each bite. Refrigerate for 30 minutes to set the chocolate and solidify the peanut butter.

Cook’s Note
If making these on a hot, humid day, dust your hands with confectioners’ sugar before rolling the peanut butter balls to prevent sticking.
