Grilled Stuffed Jalapeno Chiles

Ingredients

4 large jalapeno chiles
4 tablespoons shredded cheese (e.g., cheddar or Monterey Jack)
1 teaspoon dried oregano
Salt and pepper, to taste
4 slices bacon

Directions
Preheat your grill (gas, charcoal, or stovetop grill pan) to high heat.
Grill the jalapenos until browned, blistered, and slightly softened—about 3–5 minutes per side. Remove from heat and let cool.
While the jalapenos cool, mix the cheese and oregano in a small bowl. Season with salt and pepper.
Prepare the jalapenos by making a crosswise cut at the stem end, then slicing lengthwise down the middle (do not cut all the way through). Peel open the sides and use a spoon to gently scrape out the seeds and veins.

Fill each jalapeno cavity with 1 tablespoon of the cheese-oregano mixture.
Wrap 1 slice of bacon tightly around each stuffed jalapeno to seal in the cheese.
Return the jalapenos to the hot grill, placing them on the side where the bacon ends to prevent unraveling. Grill until the bacon is crisp and fully cooked—about 5 minutes.
Serve immediately.
