Ingredients

For the BBQ Seasoning:
Paprika
Sugar
Onion powder
For the BBQ Butter:

Softened butter
Fresh oregano, chopped
Scallions, chopped
Orange zest
1/4 teaspoon salt

Cayenne pepper (to taste)
BBQ seasoning (from above, to taste)
For the Dish:
Halibut fillets (6 ounces each, 6 total)
Olive oil (for brushing)

Salt and pepper (to taste)
Asparagus (1 bunch, trimmed)
Directions
Make the BBQ Seasoning: In a small bowl, stir together paprika, sugar, and onion powder until well combined. Set aside.
Prepare the BBQ Butter: In another bowl, use a rubber spatula to blend softened butter with chopped oregano, scallions, orange zest, 1/4 teaspoon salt, cayenne pepper, and a generous scoop of the prepared BBQ seasoning (start with 1/4 cup and adjust for flavor). Spoon the mixture onto a piece of plastic wrap, then use the wrap to shape it into a tight log. Refrigerate for at least 30 minutes to let the flavors meld and the butter firm up.

Preheat the Grill: Heat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
Grill the Halibut: Brush each fillet on both sides with olive oil, then season with salt and pepper. Place the fish on the grill and cook for 4 minutes per side—until the center is opaque and flakes easily with a fork. Avoid overcooking to keep the halibut tender.
Grill the Asparagus: While the fish cooks, brush asparagus spears with olive oil and season with salt and pepper. Grill for 6 minutes total, turning once, until tender with slight char marks.
Serve: Transfer the grilled halibut and asparagus to serving plates. Top each fillet with a generous tablespoon of BBQ butter (let it melt slightly over the hot fish). Serve any remaining butter on the side for guests to add more if desired.
